My Go-To 10 Minute Healthy Dinner Idea: Tortilla Pizzas

Happy January! If you are anything like me, you will agree that walking home in the cold and dark every evening after work deserves nothing more than a nice warm shower and a plate of steaming dinner waiting on a tray on top of your bed, alongside a brand new book to get stuck into. Except, that never happens and once my fingers have stopped throbbing from the cold, I have to figure out how to stop my hands from quaking and how to operate a cheese grater without slicing off my already delicate fingertips.
Since the beginning of the month I have been taking a "diamond" approach to eating: having small meals for breakfast and dinner, with a dinner sized meal for lunch. What with the cold and the short Winter evenings, I refuse to spend too much time in the kitchen, so my go-to dinner has been tortilla pizzas.
This is a really good option for anyone who wants to get a shed load of vitamins and goodness into their diet in one meal, because it is more or less a fridge cleansing option- e.g anything that looks like it's wilting, starting to mould or change colour goes on a tortilla pizza. 
Here are two of my favourite tortilla pizza options that demonstrate just that.

Method
It's simple to make- preheat a grill to medium heat and place a wheat or white-wheat tortilla on an oven rack; then just cover with ingredients, starting with a sauce or paste base. Don't use foil or an oven tray, it won't come out crispy at the bottom, or it overcooks and burns. Cook for about 7 minutes, but check frequently depending on your oven. Then flop onto a plate, take a couple of pictures for Instagram, and you are ready to eat!

1. Healthy Sloppy Joes Salad

Ground beef, lightly cooked in coconut oil
Onion
Cheddar cheese
Cherry tomatoes
Handful of (wilting) spinach leaves 
BBQ sauce
Homemade tomato sauce
Black pepper
Basil seasoning


2. Pesto Greenery

Ground beef, lightly cooked in coconut oil
Cheddar cheese
Half a green pepper
Sweetcorn
Spinach leaves
Green pesto sauce
Black pepper
Basil seasoning 


When I eat this, I like to cut up triangles, roll up and dip into a little bit of guac! It tastes really good, I promise.

If you don't like the sound of ground beef, chicken strips works well, as does tuna steak. For vegetarian options, go heavy on the greens, such as kale, spinach, green peppers and brocoli for a really healthy option. Some of the different varieties that  have made include a BCT (bacon, low fat chipotle sauce and tomatoes), salmon and avocado and fajita chicken- to be honest, most ingredients work as long as you cook them properly.
